Chicken with Scrambled Cheese {aka ~ Easy Chicken Cordon Bleu}

I’m still laughing.  This girl of mine, she loves to help me in the kitchen, constantly asking if there’s a job she can do.  Because this week’s Hellmann’s Chicken Change Up recipe was so easy, I thought I’d record her assistance.  And here you have it:  (subscribers, you may need to click over to see the video.)

Scrambled cheese.  And that, my friends, is the essence of my four year old.

Chicken Cordon Bleu is not a recipe I attempt often.  Once, maybe?  The Hellmann’s version, however, truly is super easy.

  1. It is really hard to say what my go to chicken meal is. If I don’t have a plan I usually end up doing something Mexican with chicken…taco soup, salsa chicken, or chicken burritos. We LOVE chicken at our house!

    My favorite chicken meals:
    In the winter – coating chicken in egg and then crushed French’s fried onions. I then bake the chicken at 350 degrees for about 30 minutes.

    In the summer – marinade with teriyaki sauce and grill on medium heat for 15-20 minutes.

  4. My “go to” chicken meal is Italian Chicken. (Chicken marinated in Italian Dressing and served with pasta – which is tossed with additional Italian dressing.)

  5. We love having marinated chicken on the grill. One of my favorite marinades is simple — olive oil, red wine vinegar, salt, pepper, and garlic cloves. Yum!

  6. My chicken go-to meal is Chicken Quesadillas. Cube cooked chicken breasts (great way to use leftover chicken!). Place large flour tortilla in skillet. Spread thin layer of refried beans on tortilla, then sprinkle with your favorite cheese (I prefer Kraft Mexican Shredded Four Cheese Blend from Sam’s Club) and let cheese start to melt. Distribute cubed chicken pieces on half, fold over tortilla on top, and lightly brown on both sides. Serve with your favorite Mexican toppings: sour cream, salsa or taco sauce, guacomole, more shredded cheese, lettuce, tomatoes, onions, etc. Quick and easy for those nights when your time is limited and your kids will love them!

  8. My first go to chicken meal is a whole chicken in the crockpot. Then of course I have leftovers for enchiladas and chicken noodle soup!! We eat a lot of chicken in our house.

  9. I will now, and forever after this, refer to shredded swiss cheese as scrambled cheese. That is a very creative way of saying it!
    My son, when he was this age, looked at a pot of boiling water and, not knowing the word “boiling,” told me, “Look, Mommy. That water’s crabbling!” Pots of water no longer boil in my house – they crabble.

    We love classic fried chicken, but I also love a baked version of fried chicken that we eat by itself, with spaghetti, or with pasta and vegetables in a garlic sauce. Chicken is often found on our table!

  11. My go to easy chicken dinner is chicken thrown in the crock pot with a bottle of barbeque sauce. I usually make baked potatoes and salad to go with it. Simple and yummy!

  13. The easiest chicken dish I know of is what we call “Shredded Chicken” in Ohio. Essentially, you cook a whole chicken, chop/shred and then mix with cream of chicken soup. You can cook this in a crockpot for hours, or cook it in minutes on the stove top. Serve on sesame seed buns. Yum!

    my go to chicken meal is baked chicken fingers. My kids love them dipped in ranch or I serve them over some spaghetti or on a salad.

  16. Breaded chicken tenderloins from Sams. Just throw em in the oven for a half hour.

  18. My favorite chicken is cut-up potatoes, carrots, onions, and garlic cloves on the bottom of the crockpot. Top with whole chicken covered in seasonings. Cook on low for 4 hours or so. (I always ask my husband about that part.)

    My favorite easy chicken meal is marinated chicken on the grill. In the winter we use the grill pan.

  23. my favorite chicken recipe is the Hellman’s chicken recipe where you use mayo and then bread crumbs mixed with parmesan cheese. So yummy!

  24. We do a crock pot chicken often…it is easier, delicious and better for us than any run to the store rotisserie could be! I so want a microplane!

  25. If I have cooked chicken in the freezer, my go-to meal is chicken tacos. If I have raw breasts in the freezer, it’s BBQ chicken, which in the winter is just chicken breasts with BBQ sauce smeared on top baked in the oven. Boy, am I ready for some grilling weather!

    I love to buy a rotisserie chicken and use it for a variety of meals such as enchiladas, nachos, taco salad, and many other things.

    What a lucky mom to have such a fabulous helper!

    Chicken is so versatile, we use it often. Go to meals are pan seared chicken with whatever herbs sound good that night, chicken breasts covered in salsa and baked in oven, chicken and dumplings. A fancier favorite is balsamic chicken.

  37. Salsa chicken – rub on some taco seasoning, dump some salsa on top and throw the dish in the oven. Sprinkle some cheese on at the end and dinner is served!

    I love the video, Amy. My favorite part is when she says, “I always forget!” I can’t wait to have (adopt) children and do all those fun things! 🙂

  38. Grilled chicken breasts coated with oil, salt, pepper and garlic powder. Then sliced or diced for freezing. One current favorite with the formerly frozen meat is Tortilla Soup which we had for dinner tonight: sauteed onion & garlic, homemade broth, salsa, cumin, chili powder, chicken. Serve with tortilla chips, sour cream, shredded cheese and black olives!

  39. Chicken Saltimbocca:

    Flattened chicken rolled with crumbled sage and prosciutto jelly-roll style and then dipped in butter then a bread crumb, parmesan cheese mixture and then baked in a shallow baking dish for 40 minutes at 350 degrees. So simple and frees your time to finish up other stuff in the kitchen before sitting down with the family or company!

  40. Mine is chicken tacos. So easy and its a meal everyone in the family eats. With a family if 6 funding something everyone likes us hard.

  43. My go to chicken meal is: cut up whatever chicken you have, breasts, thighs, etc. Cook in skillet in EVOO. Add 1 can of cream of chicken soup and 1 can of cream of mushroom soup + 2 cans of milk. Stir until heated all the way through on medium heat. While this is cooking make brown rice or noodles – whichever you have on hand. Pour over noodles or brown rice. You can add veggies to this very easily! I’ve added green peas, broccoli, carrots, mushrooms and cauliflower in this and it’s awesome!

  44. My go to chicken meal is chicken casserole. It’s a great way to use up leftover chicken and it’s yummy and easy 🙂 I am also a fan of a chicken in the crock pot then using leftovers for chicken and rice, enchiladas and whatever else.

    Sometimes I feel like making an easy chicken and other times I feel like cooking up a storm. It really depends on how our day is going and the mood of the moment. I love to make chicken parmesan for our family.
    When in a hurry,we just enjoy some good chicken alfredo. Simple but yet delicious.
