Chicken Salsa Nachos

 

You know how I love our loaded tostadas, right?  This is the same love, only different.  Load them up however you choose!

*** Sticky chicken has lots of flavor if made as directed.  If you’re starting with plain chicken, you may need to add more spices.

*** This goes together super fast as is, but the chicken mixture also freezes beautifully.  Simply warm while you’re chopping veggies for a 10 minute dinner.

*** Perfect for a fun DIY dinner night.  Kids love putting together their own nacho plates.

*** Don’t have chips?  Do the same thing with hard or soft tacos, burritos, or tostadas!

    In fact, I was going through what we have in the kitchen (in my head) then came to the chips…we don’t have any. I have vowed this week not to buy anything and only to cook from what we already have. Then I read all the little star points that you put at the bottom! :) It just so happens that I stocked up on hard and soft taco shells! (Yes, I should have been able to come up with that on my own! But it is almost midnight.) I just love how God comes to my rescue…I’ve actually had a menu plan for 3 nights this week, but I had nothing in my head for tomorrow. Now I need to go get some chicken out of the freezer! ;)

      • Well, the sticky chicken is done, and it is wonderful!! I made a lot which is what we need to feed 4 adults and 5 kids! It just so happens that my kids are eating at my dad’s tonight though and my father in law is out of town so it’s just my husband, mother in law, and me. It’s a good thing because when I put the chicken in the pan to add the salsa, I found out there was NO salsa in the pantry!! What?!! But I coupon…I’m supposed to have salsa!! ;) I came up with right at 1 cup from the fridge so it’s perfect for 3. I’m freezing the other 5 cups of chicken!

    • Jenna, I just put chicken breasts (with your sticky chicken spices on them) in the crockpot. Do you think I need to add any liquid to it since it’s not a whole chicken?

      • Tara, I’ve done it with chicken breast many times and I never did add any liquid, but if you think it might (or if your crockpot runs hot) go ahead and add 1/4-1/2 a cup of water to the bottom. Hope they turn out great!

  4. How do you get your sour cream like that? Mine is just globs. LOL!

    • Mine globs most of the time, but if I want it to look pretty I put it in a sandwich baggie and cut a tiny corner to squeeze it out of. :)

  5. I made this for a snacky supper last night – it was a HUGE hit.

    I used homemade salsa and topped the meat mixture with fresh cilantro.
