Chicken Marinade

One of my favorite things about summer is the food.  We often fill the grill and then eat from that one cooking session for the rest of the week.  Love it!

My uncle clued me in to what is now our favorite marinade for grilled chicken breasts.  It doesn’t get any easier than this!

Grilled Chicken Marinade

  • 3-4 chicken breasts
  • 1/2 c. barbecue sauce
  • 1 c. Italian salad dressing

Put the chicken breasts in a resealable, gallon-size plastic bag.  Dump in the barbecue sauce and salad dressing (I never measure).  Shake, flip, and otherwise mix it all together.  Let sit in the fridge for several hours or overnight, flipping the bag whenever you think about it.  Grill as usual.

Delicious as the main dish with a side of potatoes, rice, or grilled veggies, this chicken also makes a perfect salad topping or stir fry addition.  Oh, and fajitas… very yummy in fajitas!

I am ALL about marinating chicken. It makes it seem more palatable to this recovering vegetarian. And I really want to use the grill more this summer, too! Thanks, Amy – you hit a home run with this one! :>)

Oh, I am SO GLAD to have a new chicken recipe! Thank you, thank you, thank you. I have been watching my weight, and eating lots of chicken lately, so this is perfect timing. Sounds delicious!

Now can you tell me how to make a perfect London Broil? I refuse to ever buy it again. I have ruined one too many. LOL!

How funny; I’ve been making marinade this for awhile now, and was planning on mentioning on my blog eventually. I usually use equal parts of bbq sauce and dressing, though. This also makes a great dipping/steak sauce.
