Cheesy Broccoli and Cauliflower Soup

A simple, frugal bowl of comfort.  If you’re not a fan of the broccoli and cauliflower combo, feel free to use just one and not the other.

Cheesy Broccoli and Cauliflower Soup

  • 3-4 cups chopped broccoli/cauliflower combo (fresh or frozen)
  • 3 T. butter
  • 1/2 cup chopped onion
  • 6 cups chicken stock or broth
  • 1 tsp. garlic powder
  • 12 oz. egg noodles
  • 4 cups milk
  • 3 cups shredded cheddar cheese

Steam broccoli and/or cauliflower.  In a large pot, melt butter.  Saute onion in butter until clear.  Add chicken stock.  Bring to a boil.  Add noodles.  Boil 3 minutes.  (If you’re using thicker homemade or frozen egg noodles, boil 10 minutes).  Reduce heat.

Add steamed, finely chopped or mashed, veggies.  Add garlic powder, milk, and cheese.  Stir until cheese is melted.  Do not boil.

I use my Immersion Hand Blender to blend the veggies.  Simply dump them in before the noodles and give it a spin.  Love that thing!  Amazingly, it sat in my cabinet unused for 11 years.  (True story… that I’ll tell later.)

  1. Yum….have you tried cooking the broc in the chicken broth and skip the steaming part? Taste the same and you can cook all in in one pot!!

    • That method works fabulous with my hand blender! I was trying to figure out how best to write that option in, because I’m guessing a lot of people would need to do the steam and mash method… I should have written two sets of instructions. 🙂

  2. Yum! If you’re serving muffins, you might skip the noodles. Or vice versa. I’m trying to teach my kids not to each such starch-heavy meals. 🙂

    I think I’ll try this with barilla noodles, and fresh garlic instead of garlic powder. I like a fresher taste. My daughter’s favorite food is broccoli…she’ll love this. 🙂
