After my daughter raved about the cheesy breadsticks served at her cousins’ for dinner one night, she asked if I could make some at home. Knowing my frugal ways all too well, my sister-in-law warned me that they were kind of expensive.
Not a problem. We’ll make our own! (It’s so easy… you can, too!) Here’s what we came up with.

- 1 Tbsp. yeast
- 1 c. very warm water
- 1 t. sugar
- 1 t. salt
- 2 T. olive oil
- 1 c. whole wheat flour
- 1 1/2 c. unbleached white flour
- 1-2 c. mozzarella cheese
- garlic powder
- 1/3 c. melted butter
- Combine yeast, water, and sugar. Let set a few minutes to activate yeast.
- Mix yeast mixture with salt, olive oil, and both flours.
- Knead into soft dough. Let rest 5-10 minutes.
- Separate dough into 12 balls. Roll balls into breadsticks.
- Flatten breadsticks with rolling pin.
- Cut cheese into small strips. (String cheese works great, too!)
Lay cheese on breadstick. Sprinkle with garlic powder.

- Fold dough around cheese. Seal well!
- Brush melted butter on each breadstick. Sprinkle with garlic powder (again).
- Allow to rise 5-10 minutes.
- Bake at 450° for 12 minutes.
- Brush on more melted butter. Serve warm.

That looks so good, I just about fell out of my chair. (Bread plus cheese equals happy me.) How big are your finished breadsticks? I’m thinking your strips of cheese are probably cut from the average 8 oz block, so maybe 6-8 inches?

Those look yummy! I like that your recipe includes some whole wheat flour. I haven’t seen many garlic bread stick recipes out there that do. I’ll have to try it sometime.

These are absolutely delicious!! I made them tonight to have with spaghetti & meatballs – winning combination!!
My only question – I sealed them tight, but when I took them out of the oven alot of the cheese had leaked out through my seams. I put the seams down on the pan – do you have any suggestions? Thanks again for another great recipe!!!
Much as I hate leaving comments BEFORE I’ve actually made a recipe, when it would be more useful for others, I just can’t help but share how many ideas this is conjuring for me right now. I could add a little fresh tomato or tomato sauce, and/or some tasty meat (maybe nitrate-free sausage or pepperoni) or even some yummy pre-cooked greens, or…Gosh, the possibilities are endless. I LOVE this recipe! Thank you for sharing it!

Are these freezable? What would I do when I take them out of the freezer? Let them thaw and then bake them again?

@Gina S., You know, I’ve never frozen them. We just eat them up straight out of the oven.
Don’t see why you couldn’t, though. I’d just warm them back up in a low oven.

My step son is a PICKY eater and getting him to try new things is like pulling teeth! I made these up and he ate 5 in one night!
I have started making a double batch each Sunday with a stripe of pizza sauce next to the cheese and some chopped up pepperonis added to the dough. It makes GREAT school lunches and he eats every bite!
We also used this dough to roll thin and stuff with meatballs and cheese… mmmm my Husband couldn’t get enough! Thanks!!!!

These were so good. Instead of cutting up cheese I just used a piece of string cheese in each breadstick. It worked very well.
Yes! If I wasn’t such a cheapskate, I’d definitely give that a try. Actually, it would make the process just that much quicker. Yay!
I made these with string cheese instead of cutting up motzerella. One piece works well for each breadstick. They were so yummy.
See… now you’re revealing the CHEAP side of me. It was less expensive to cut my own strips, but yes, I bet that worked perfectly!
Yum! Just whipped up a batch of these to go with our homemade tomato soup tonight. I used cheddar and added minced onion flakes in with the garlic powder– delicious like that, too!

The local pizza place in the town where I went to college had the best stuffed breadsticks I’d ever had. I’ve been trying to duplicate them ever since. These look like they may just be the ticket. I’m going to put some chicken in with the cheese and see how they turn out. No more pilgrimages to Bowling Green, Ohio just for breadsticks!

I had never ever tried baking before and I wanted a very easy not very complicated recipe for my first baking adventure,that’s when I saw ur recipe. U have to trust me it has become my favourite bread recipe now. I have even started stuffing them with different fillings like chicken n minced meat. Whatever the filling may be the bread has to be Amy style
