Caramel Pecan Cinnamon Rolls

Want to take your cinnamon rolls up a notch?  This will do it!  It’s hard to beat a warm homemade cinnamon roll, but adding ooey-gooey caramel and pecans does the trick for me.

 Caramel Pecan Cinnamon Rolls

Start with your favorite cinnamon roll recipe.  Mine are Mom’s Cinnamon Rolls and Big Batch Cinnamon Rolls.

Before you floss your rolls and stick them in the pan, spread the caramel pecan topping on the bottom.

Caramel Pecan Topping

  • 3/4 c. brown sugar
  • 1/4 c. melted butter
  • 1 T. light corn syrup
  • 1/2 c. chopped pecans

Mix brown sugar, butter, and corn syrup.  Spread on bottom of pan.  Top with pecans.  Bake the rolls as normal.  When they’re done,  immediately invert them onto a tray, shaking slightly to loosen.  I put my tray on top of the hot pan of rolls, grab both the tray and the pan with pot holders, and flip it over.  Don’t forget to scrape out any extra goo!

@JessieLeigh, I KNEW someone would out me on the corn syrup. ;-) This is the ONLY thing I’ve used it for. I figure 1 T. per year can’t hurt… right?!

I made them today!!! So yummy!! How in the world do you get yours to look so pretty? Mine just looked like blobs instead of nice perfectly shaped rounds. Guess I just need more practice! :) Thanks for sharing.

Can these be made ahead, refrigerated and baked in the morning? Has anyone ever frozen the rolls after forming them but before baking?

@karen, I’ve never done the caramel pecan that way, but I have had great success doing that with my regular cinnamon rolls. My guess is that it would work just fine.

I have some frozen (not baked) rolls ready to thaw for tomorrow’s supper. This is my first time doing it that way. I’ll let you know how it turns out!

I just made a batch of these for my husband to take to work. They look delicious. The only problem is the pecan topping burnt in one corner of the glass pan. I’m wondering if it was the glass pan or if I should double the caramel pecan topping. I’m waiting for the verdict from the secretaries.
