I know ~ me, too! Once I found out about this, I cook them this way for my girls a lot … they are the perfect size when cooked in a Pyrex ramekin!

I remember the first time someone showed me a scrambled egg cooked in the microwave. It blew my mind! (I was just a kid and we were staying with some friends who must have been more “high tech” than my family – lol. )

If you’re in a hurry, scramble the egg with a T of water, put in a glass dish and microwave it for about a minute ~ quick and easy, already round to fit the bun, too! Love breakfast sammies!! =) (and, do try the homemade english muffins ~ super simple! and even easier if you make it into a loaf and slice for toast!)

I have made these with fried eggs before, I just assemble them over the weekend and freeze. We pull them out and heat them and they are fine. I am going to try these with scrambled eggs, I think the kids would enjoy them more.

Good question! You’re right… I’ve kept scrambled eggs in the freezer before. Hmmm, might need to freeze a batch completely and see what happens. Sure would make my hubby’s early hunting mornings a lot smoother!
