Blueberry Streusel Muffins

More comfort food straight from my church centennial cookbook.  If I needed to purge all but one cookbook in my home, this is the one I’d keep!

Blueberry Streusel Muffins

  • 1/3 c. sugar
  • 1/4 c. butter, softened
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 2 1/3 c. flour (I used 1 c. whole wheat)
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 1/2 c. fresh or frozen blueberries

Streusel Topping

  • 1/2 c. sugar
  • 1/3 c. flour
  • 1 tsp. cinnamon
  • 1/4 c. butter

Cream sugar and butter.  Add egg and vanilla; mix well.  Combine flour, baking powder and salt; add to the creamed mixture alternately with milk.  Fold in blueberries.  Scoop batter into greased muffin tins (or paper-lined tins).

For Streusel:  Mix sugar, flour, and cinnamon.  Cut in butter until crumbly.  Sprinkle over muffins.

Bake at 375° for 25-30 minutes.  Makes 12-18 muffins.

I imagine these would be tasty with any berry combo: strawberry, raspberry, blackberry… what’s your favorite berry?

    These sound yummy! Might just have to give them a try to use up some of those frozen blueberries that I have in my freezer. 🙂

    • So jealous of everyone who needs to “use up” blueberries in the freezer. We pay out the wazoo for blueberries. 🙁

  13. Oh, I love any sort of berry. I’m partial to Jessica’s (FishMama’s) Raspberry Nut Muffin recipe… I used to make those for my mother-in-law all the time. I swear it’s the main reason she likes me. 😉

    • I love the flavor of raspberries, but I don’t like seeds in my berries. 🙁

      • You may already know this idea but thought I would post anyway. We love blackberries and raspberries but dislike the seeds. I take these berries with just a little water in a shallow pan and cook just enough to heat through, then I put them through a food mill to make a puree. I pour the puree in ice cube trays and freeze overnight and then pop out and store in freezer bags.
        It is the best puree for smoothies, ice cream, and baked items.

        • I don’t have a food mill, but could probably figure out something… will have to keep that in mind the next time I see berries at reduced prices!

  15. My husband LOVES blueberry muffins and I’m always trying new recipes for him. I have just enough frozen blueberries left for one batch (if I can stop eating them straight out of the freezer), and these are on the list! I’ll let you know once I have a chance to make them!

    I’m thinking I’ve seen seedless raspberries before, but they aren’t my favorite so I haven’t paid much attention.
