Blueberry Overnight Coffeecake

Stirring up this healthy(er) coffeecake at night and baking it in the morning made the mad rush before church a little less mad.  And we even have leftovers for tomorrow’s First Day of School breakfast!

My son was so excited to wake up to “Cake for breakfast!”

Overnight Blueberry Coffeecake

  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup plain yogurt
  • 1/2 cup applesauce
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 cup fresh or frozen blueberries (other berries would be tasty, too!)

Topping

  • 1/2 cup packed brown sugar
  • 1/2 cup chopped nuts
  • 1 tsp. ground cinnamon
  1. In a large bowl, combine dry ingredients.
  2. In a separate bowl, combine yogurt, applesauce, butter, and eggs; add to dry ingredients and mix well.  Batter will be thick.
  3. Fold in blueberries.
  4. Spread into a greased 9×13 inch pan.
  5. Combine topping ingredients; sprinkle over batter.
  6. Cover and refrigerate several hours or overnight.
  • Uncover and bake at 350° for 45-50 minutes.

      Hi! Does it have to be 1 cup wheat flour or can i just use 2 cups reg flour instead of 1 reg/1 wheat?

      PS: Last week we had ANOTHER double batch of the the cheesey potato soup with bacon! LOL

        @Laura, I’ve only made it 1/2 and 1/2, but I see no reason why it wouldn’t work the other way!

        Yay for cheesy potato soup. Looking forward to fall weather so I can put that back in my meal rotation. :)

      Just so you know this is one of my favorite breakfast recipes. I actually make it with only whole wheat flour and I use Rapadura instead of the white and brown sugar and it is still amazing. Thanks again for the recipe.
