Beef and Chicken Fajitas

We couldn’t wait a day longer.  My bell peppers are slow to produce this year, so I finally gave in and purchased the colorful gems when I caught them on sale.  These fajitas, a recipe from my sister-in-law, are a family favorite!

Beef and Chicken Fajitas

  • 1/4 t. cumin
  • 1/4 t. oregano
  • 1/4 t. paprika
  • 1/4 t. chili powder
  • 1/4 t. sugar
  • 1/4 t. garlic salt
  • lime juice
  • salt
  • 1 Tbsp. oil
  • 1 large chicken breast
  • 1 pound sirloin or round steak
  • 1 large yellow onion
  • 3 or 4 bell peppers (green, yellow, red, orange)
  • flour tortillas
  • shredded cheese
  • salsa
  • sour cream
  1. Mix together cumin, oregano, paprika, chili powder, sugar, garlic salt.  Set aside.
  2. Slice peppers and onions. Beef and Chicken Fajitas
  3. Thinly slice meat.
  4. Stir fry onion and peppers in oil with salt and lime juice (season to taste) in a large skillet.  Remove from pan.  Set aside. Beef and Chicken Fajitas
  5. Using the same skillet, stir fry beef and chicken.  Sprinkle with the seasoning mixture.
  6. When meat is cooked through, add peppers and onions.  Heat through.
  7. Serve on warm tortillas.  Top with your choice of shredded cheese, salsa, and sour cream.

 Beef and Chicken Fajitas

** The meat will slice easier if it is still partially frozen.

** Feel free to use just beef or just chicken.  I’ve heard that shrimp is good, but we haven’t tried that.

** Mix up a 4X batch of the seasoning and use 1 1/2 tsp. for each recipe to ease preparation.

That looks great. I just love eating red and yellow peppers. There’s something about the way they taste!

Those look delicious! My husband would be a super happy guy if he came home to a house smelling like fajitas. I’ll have to make it for him one of these days.

Those look great! I bought colored peppers at Aldi’s for $1.49(half price), I used half of them already. I think I will give these a try with the other half.

I love fajitas but always cheat and get the pre-seasoned meat and just grill it. Yours look delicious.
