I can make a meal out of appetizers all day every day. Give me dips. Give me bite-sized. Give me little bits of everything! That’s how our Bunco group did monthly meals. We’d rotate homes and each hostess would put out a buffet of her favorite snack foods. It was the best! We also eat like this during the holidays. And for the Super Bowl. And sometimes on random Sunday evenings.
Bacon-Wrapped Water Chestnuts always go over well, and go fast! It’s the salty/sweet, chewy/crunchy thing, I think. And, of course, everything’s better with bacon! I believe I first stole this recipe from my aunt after a New Year’s Eve party. It couldn’t be simpler!
Bacon-Wrapped Water Chestnuts
1 pound bacon
2 cans (8 ounces each) whole water chestnuts
¾ cup ketchup
¼ cup barbecue sauce
¼ cup brown sugar
¼ cup white sugar
Cut bacon in half. Drain water chestnuts. Wrap each piece of bacon around a water chestnut, securing with a toothpick. Place in a baking dish. Place under a broiler until bacon is crisp. (Watch so you don’t burn the bacon!) Drain the grease, or move wraps to a different dish.
In a small saucepan, combine the ketchup, barbecue sauce, brown sugar, and white sugar. Stir together and bring to a boil. Pour over bacon wraps. Bake at 325° for 15-20 minutes. Serve warm.
Over six (wow!) years ago I started this blog with the goal of finding community, and I found it fast! Working with and getting to know other bloggers as true friends on this crazy life journey together, cheering each other in our similarities and differences, was one of the things that kept me going. “Back in the day” we did all sorts of fun recipe swaps, link ups, and group projects. Then Pinterest took over the world and the blogging community just isn’t quite the same.
