Apple Cinnamon Coffee Cake

One of my favorite things to do is to peruse church cookbooks for “old” recipes and make them new.  That’s what I did with this one, using a few of the many pounds of Granny Smith apples I constantly find on Manager’s Special.  It’s super moist and quite the breakfast treat.

Apple Cinnamon Coffee Cake

Batter:

  • 1/2 c. butter
  • 3/4 c. sugar
  • 2 eggs
  • 1 1/2 c. sour cream
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 cups flour
  • 4 apples, peeled and diced (I used Granny Smith.)

Filling and Topping:

  • 1/2 c. sugar
  • 1/4 c. brown sugar
  • 2 tsp. cinnamon
  • 1 c. nuts (optional)

Cream together butter, sugar, and eggs.  Add sour cream, vanilla, and apples.  Sift together dry ingredients, add to wet mixture.  Spread 1/2 batter in a greased 9×13 pan.  Sprinkle with 1/2 the sugar mixture.  Spread remaining batter on top and top all with the rest of the sugar mixture.  Refrigerate overnight. Bake at 350° for 45-50 minutes.

  1. Sounds delicious! My mom makes a similar cake, but hers is topped with caramel sauce instead of streusel. :) I think I’d enjoy both versions equally well!

  2. I love that you refrigerate this overnight and bake it fresh in the morning. That would really save some time!

  3. Did you use white flour?

  4. Yum! It would probably be really good with other fruit, too–blueberries or blackberries.

  5. I’ve bookmarked this one. Not only does it sound delicious, but I can make it the night before! Perfect!! Thanks so much for sharing the recipe.

  6. That looks fantastic!!

  7. That looks delicious! I just got a bunch of apples on sale, I think I need to make this soon. :)

  8. This looks great. I will be making it for our new ladies group morning meeting. Wonderful! :-)

  9. This looks great! We went apple picking and I have an abundance of apples (about 15 pounds) that I need to do something with. I am going to a housewarming this weekend and I think I will try this recipe to bring with me!

  10. Oh, yum! It’s that time of year where I buy a big box of apples every month from the co-op, and I’d love to make this! Thanks for the recipe.

    Blessings,
    Michele

  11. I am looking forward to giving this recipe a whirl!

  12. I just made this and cannot wait for the morning! I used 1/4 c Applesauce in place of the butter and 1 cup White Whole Wheat Flour in place of one of the cups of white flour. We’ll see how it is!
