Angel Food Cookies

Tender, light, and delicate describes these yummy cookies that are a blast from my past.  Mom made them best, but mom also used Crisco. ;-) Make them little for a sweet and dainty addition to a spring tea party or shower.

Angel Food Cookies

  • 1 c. butter, softened
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla (or 1/2 tsp. vanilla and 1/2 tsp. coconut flavor)
  • 1/4 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cream of tartar
  • 2 c. flour
  • 1 c. coconut
  • sugar and water for dipping

Cream butter and sugars.  Add egg and vanilla.  Mix well.  Mix in dry ingredients, including coconut.  Roll dough into small balls.  Dip each ball first in water, then in sugar.  (a fun way for the littles to help!)  Bake at 375° for 7-9 minutes.  Watch closely.  These cookies are best when they just get set.  You don’t want them to turn brown.
