A Whole Lot of Baking Going On

While I can’t claim it all for myself, there’s a whole lot of baking going on in cyberville.  At 38 weeks pregnant, Crystal’s been doing some nesting in her kitchen and invited us all (pregnant or not!) to join her.

As for me, I baked and sliced up a 10 pound ham yesterday.  It is so nice to have this meat available in my freezer for casseroles and delicious sandwiches.  I even stuck the hambone in there.  I’m sure this lovely spring weather will glitch a day or two and I’ll be prepared to make 15 bean soup!  (If you have a tried and true ham bone soup recipe, I’d love to take a look.)  Here’s my bagged up ham, resting on top of a quarter of beef.

Once the ham was done, I mixed up some muffins.  I’ve become a big muffin fan since having children. They make for a nice quick snack or side dish with soup, and it’s so much easier to grab one for the kids than slicing a loaf of quick bread. Here’s my latest bread-turned-muffins recipe. I made them with some of the pumpkin from last fall’s harvest.

Pumpkin Dessert Muffins

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. sugar
  • 4 beaten eggs
  • 2 c. pumpkin
  • 1 c. melted butter

Mix all dry ingredients together in a large bowl.  Make a deep well in the center; pour all other ingredients in.  Stir just until combined.  Scoop into muffin tins.  Sprinkle with a cinnamon/sugar mixture.  Bake for 18-20 minutes in a 350° oven.  Makes 2 1/2 dozen muffins.  (I made 2 dozen regular and 1 1/2 dozen mini muffins.)

This is prom week in Tiny Town, and Lance is busy helping his students decorate for the big event.  When he surprised them today with the news that I was coming to help, their reaction was “What’s Amy bringing to eat?!”  Well… I suppose I could share the Angel Food Cookies that I made this morning.  But I probably won’t. ;-) I’m not a meanie… I just think they would rather have brownies, or chocolate sheet cake, or something.  Maybe tomorrow.

    We did a big turkey on Sunday so we are eating lots of that this week :) I wanted to join in the baking fun but I discovered that I had no foil, bags or saran wrap! I didn’t have enough covered dishes so I had to wait! Oh well. I did make the yummy dinner rolls though!
